Power Parfait

Sorry I am one day off again!!!!  ughhhhhh it seems like every week this is happening!!!  I promise to get back on track very soon!!!!   I contacted Sarah Davis of Body Balance 365 for another healthy recipe that will be an easy family favorite during this end of school year rush. This Power Parfait is perfect!!!!  We made it this morning!!!  Bon Appetit!!!

Power Parfait
¾ cup coconut unsweetened yogurt
¼ cup plain oats
1 teaspoon chia seeds
1 scoop of vegan protein powder
1/4 cup almond or coconut milk, or coconut water
¾ cup fresh berries
¼ cup low-sugar, gluten free granola 
Optional toppings: shredded coconut, chopped apple, mint or chopped nuts

Mix yogurt, oats,  chia seeds, protein powder, and liquid. Stir until the liquid is absorbed, and everything is blended. Add berries, granola, and any additional toppings.

Waitress

Ok..so you never know who you might meet….a couple of weeks ago I was in NYC.  At Bergdorf actually!!  I was in the shoe department (the best shoe department in the world BTW) and the nicest lady started to talk to me.  She was buying the most fabulous shoes for her 90!!!!! Bday party. While we were trying on different pairs she told me that she is a Broadway producer.   Her name is Fran Weissler and she is probably one of the biggest and most successful Broadway producers.  She told me that her most recent show is Waitress.  We talked about the show and I totally became inspired in the presence of her greatness that Waitress would be our next outing!!!  Here is the summary:


Based on the 2007 motion picture written by Adrienne Shelly, the new Broadway musical, Waitress, has a book by Jessie Nelson, music and lyrics by five-time Grammy Award-nominated singer songwriter Sara Bareilles and direction by Tony Award-winner Diane Paulus. 

Jenna (Katharine McPhee), a waitress and expert pie maker, is stuck in a small town and a loveless marriage. When a baking contest in a nearby county offers her a chance at escape, Jenna must weigh her commitments against a rare shot at freedom and recognition. Her customers, co-workers, and the town’s handsome new doctor all offer her conflicting recipes for happiness – but Jenna must ultimately decide for herself.



OK….so here is the fun part…they pipe in smells of the amazing pies she bakes and sell mini pies in a jar for you to eat during the show.  The flavors are Key Lime, Cookies and Cream, Chocolate Caramel and of course Apple….OMG!! Sign me up…we have a limited amount of orchestra tickets for the Sunday, June 10th show at 3:00 pm at $130 each.  EMAIL me if you are interested. Today’s Book Club Monday choice is Bunny Mellon: The Life of an American Style Legend is this month’s Amazon book club choice and a New York Times bestseller.

Shaved Asparagus with Toasted Hazelnuts and Lemon Parsley Vinaigrette

As the weather gets warmer, I start looking for new salad recipes.  Our sponsor, Watson’s Catering emailed this recipe last week and I quickly added it to my “must try” list and thought you might like to try it too.  Bon Appetit!!!!

Shaved Asparagus with Toasted Hazelnuts and Lemon Parsley Vinaigrette

Servings: 4

  

Ingredients

12 large asparagus spears, trimmed and peeled

¼ cup manchego cheese, grated plus a piece for shaving

¼ cup hazelnuts, toasted and coarsely chopped

2 lemons, juiced and zest

½ cup extra virgin olive oil

2 tablespoons fresh parsley, coarsely chopped

Salt and pepper to taste

Preparation

Combine lemon juice, zest, manchego and parsley in a small mixing bowl and slowly whisk in the olive oil until well blended. Season the vinaigrette with salt and pepper to taste. Set aside.

Working with one asparagus spear at a time, use a vegetable peeler to shave spears into long, thin shavings. The tips will snap off as the spears get thinner, add to the bowl. Drizzle vinaigrette over shaved asparagus, toss and coat. After plating garnish each salad with hazelnuts and shaved manchego. Serve and enjoy.
