Zucchini Egg Cups

OMG!!! This recipe was sent to me and I knew I had to try it.  What a great way to make eggs…It’s like a mini quiche but so much better because NO CARBS. I tried them out yesterday and they were really delicious.  I highly recommend added them to your breakfast routine!!!  Bon Appetit!!!


In case you need new muffin pans, THESE are the ones I just purchased!!!

Cooking spray, for pan
2 zucchini, peeled into strips
1/4 lb. ham, chopped
1/2 c. cherry tomatoes, quartered
8 eggs
1/2 c. heavy cream or Fat Free 1/2 & 1/2
Kosher salt
Freshly ground black pepper
1/2 tsp. dried oregano
1 c. Pinch red pepper flakes
1 c. shredded cheddar
  1. Preheat oven to 400° and grease a muffin tin with cooking spray. Line the inside and bottom of the muffin tin with zucchini strips, to form a crust. Sprinkle ham and cherry tomatoes inside each crust. 
  2. In a medium bowl whisk together eggs, heavy, cream, oregano, and red pepper flakes then season with salt and pepper. Pour egg mixture over ham and tomatoes then top with cheese.  
  3. Bake until eggs are set, 30 minutes.

Yesterday I heard 3 very impressive ladies speak about their company and their creativity….former Vogue Editors, Meredith Melling and Valerie Macaulay and Molly Howard, the former head of business at Rag and Bone.  Basically these fashionistas believed in the universal, classic, forever chic, appeal of the stripe.  So much so, they founded their company around this belief and thus around the stripe.  Everything they feature on their site has a stripe from everyday essentials, to statement pieces for special occasions.   And I have to say I am a believer.  Check out their site and you too will fall in love with stripes!!!!

Book Club Monday/Tuesday

I am soo sorry…I am one day behind this week.  I have been running around form appt to appt for the last couple of days.  I had this post ready for you but I did not sit down in front of my computer at all yesterday..sooooo better late than never:…This week’s book club choice is awesome, From Mom to Me Again? How I Survived My First Empty Nest Year and Reinvented the Rest of my life.  We are close to graduation season and moving up ceremonies.  Next year I will have a Junior in college, a Senior in high school and a sophomore in high school…YIKES!!!  I need this book more than ever. Gulit Free Shopping

Yesterday we had guilt free eating and today we have guilt free shopping.  I went to a gorgeous Fashion Show at Neiman Marcus to benefit my daughter’s school, Sacred Heart.  From today until Sunday the school will receive a percentage of all purchases made in our local store.  All you have to do it mention that you are shopping for Sacred Heart at the check out of the White Plains Store….thats it….now onto the fashions.  They put together a really wonderful show.  They looks were right up my ally.  Here are some of my favorite finds!!!  Happy Shopping (guilt free that is!!!!!!!).




Guilt Free Ice Cream Sandwiches

Here is another winner!!!  This guilt free ice cream sandwich recipe is so delicious and only 1 Weight Watchers point..in other words ENJOY!!!!!   Make them in advance and keep them in your freezer.  Around here, everyone goes crazy for them.  I received this recipe from my awesome Texas blogger friend Totally Tikaa  who I am going to meet in person next week in NYC!!!!  EEEEEEEEEKKKKKKK I am soo excited…Stay tuned!!!!  In the meanwhile Bon Appetit!!!!!

20 whole chocolate graham crackers
1 container cool whip light

Break the graham crackers into squares.
Spread a thick layer of cool whip on half the squares and place another square on top to make a sandwich.
Store one on top of another in a rectangle rubbermaid storage container and freeze for a least one hour before eating.

Malibu Farm

Today we are going to take a quick trip to Malibu, Ca.  I have been reading about a restaurant there called Malibu Farm.  This is a farm/fork to table restaurant located on the Malibu pier.  They boast that they have a fresh, organic, locally sourced menu with the best views in Malibu!!   I have been dying to try it.  You cannot imagine how happy I was to learn that Chef Nobu opened a Malibu Kitchen in Miami…..My girls and I had lunch there everyday.  I have to say the menu was really unique and everything tasted delicious.  My parents even raved about the cauliflower crust pizza (something I never thought they would order!!!!).  We drank coconut water out of coconuts, loved the acai bowls (well at least my younger daughter did) and shared spaghetti squash lasagna. You really should check out the menu..it is something special.  I cannot wait to visit the Cali location someday soon. In the meanwhile, check out it’s pristine, bright, and immaculate, Instagram worthy decor just waiting for us!!!!
