Easy & Skinny Artichoke Dip

I am posting this recipe for my sweet friend Theresa….She was just telling me that she had the best spinach and artichoke dip and I wanted her to try this.  I have not made it yet but I am going to try it on Sunday.  My son just got home for the Christmas break.  I am sooo happy..The band is back together again!!!!!!!!!  Bon Weekend!!!!!

adapted from “Mind Full” Mom

  • ounces reduced fat cream cheese room temperature
  • 2 cups plain non-fat Greek yogurt
  • 10 ounces frozen spinach defrosted and drained
  • 1/2 cup jarred artichokes drained and chopped
  • 1/4 cup freshly grated Parmesan cheese
  • 1/3 cup Feta cheese crumbled
  • 2 teaspoons minced garlic
  • 1/4 teaspoon crushed red pepper flakes optional
  • 1 lemon zest and juice
  • 1/2 teaspoon kosher salt

Instructions

  1. Mix together all ingredients until well incorporated and transfer to a 1 quart baking dish. 
  2. Bake at 350 degrees for 20-25 minutes or until light and fluffy.
  3. Serve with veggies, tortilla chips or pita chips

Holiday Tablesettings Quick Guide

We have seen so many of these mercury glass trees in Home Goods.  I love how they used a tall one surrounded by simple leaves for the centerpiece…also the red goblets make an appearance again as do the festive dessert plates!!!

Home Goods Round Up!!!!

I went yesterday to the Port Chester Home Goods, not once but twice.  I needed to go home edit my photos and then go back to take more.  The store was jam packed..Honestly it was probably one of the best selections I have seen for gifts, holiday decor and decorative items.  I am in a Home Goods haze but happy for sure!!!!!   Here are some of the things I found!!!!  Good Luck Shopping and drop me a note letting me know what you found!!!

Please someone go and buy this skier wine cooler..so perfect for ski lovers or for a ski house!!!  Now I feel like I should have bought it…its soooo unique.

These silver nutcrackers were gorgeous!!!

Loved this appetizer dish and mercury glass string lights!!!  When I went back I found a matching tray for the holly dish…SCORE!!!

Spinach Mozzarella Chicken Casserole

Today is my dad’s birthday and we are going to celebrate over the weekend but I really wanted to make him something really good for dinner tonight.  I found this recipe on Pinterest a while ago and decided to try it (they say it is good for picky eaters)…It’s so easy (my speciality) and really really good…I highly recommend it!!

  • 2 large boneless skinless chicken breasts, cut horizontally
  • 8 oz cream cheese, softened
  • 2 cup spinach, rinsed
  • 1 tablespoon olive oil
  • 4 oz Mozzarella cheese, shredded



The marinade:

1. Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplok bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil, set aside.
3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.
4. Bake the chicken casserole for 20-30 minutes. Chicken is done when cooked through to an internal temperature of 165˚F (75°C). Serve warm with a side of cauliflower rice, or baked veggies. Enjoy!
