Best Butter Garlic Butter Shrimp Pasta

Here is another “BEST” recipe that is great for back to school nights.  I hope it is as well received as last week’s onion soup!!!!!   This pasta has been called “heaven sent”.  So, if you like shrimp then this is for you.  Luckily for me..I have a whole houseful that loved this!!!!  Bon Appetit!!!!

  • 4 tbsp. butter
  • 1 lb. shrimp
  • kosher salt
  • Freshly ground black pepper
  • 4 cloves garlic, minced
  • 3/4 c. dry white wine
  • Juice of 1/2 lemon
  • pinch of crushed red pepper flakes
  • 3/4 c. grated Parmesan, plus more for garnish
  • 1 tbsp. Freshly Chopped Parsley
  • 12 oz. cooked angel hair
  1. In a large skillet over medium heat, melt 1 tablespoon butter. Add shrimp and season with salt and pepper. Cook until pink, 2 minutes per side. Transfer to a plate.
  2. In the same skillet, add remaining butter and garlic. Cook until fragrant, 1 minute. Add wine, lemon juice, and crushed red pepper flakes and simmer 2 minutes, then add Parmesan and parsley and let cook 2 minutes more. Add cooked angel hair and shrimp and toss until completely combined. Garnish with Parmesan.

Back To School Coffee Station

So today was the first day of school in our neck of the woods.  Both my girls are GOUNDED because they would not pose for a photo for me.  I always take my annual photo of them walking in the front door of school on the first day.  Even my husband was looking forward to it!!!!  There has been so much anticipation for this day.  Tons of summer work, buying of books and school supplies and even rearranging of desks here at home.  But the most fun thing to put together for back to school is our Coffee Station.  Mornings around here are brutal.  The bus comes earlier and earlier.  I have set up a coffee station for my girls so they can grab and go.  The Keurig is an absolute lifesaver.  Those coffee pods come in so many flavor choices…from hot coco, to lattes, to Chi to iced, everything is available  I love these cups with lids that I found on Amazon.   My girls usually opt for something hot right out the door and then take one of those bottled Starbucks drinks for later!!!  I thought I would show you our station and then give you a few more ideas for setting one up on your own.  It is definitely a life saver for all of us in the morning!!!!

Over the past month some amazing products were sent to me to try and review for my readers.  Three times really caught my attention.  I love when companies send me items and they become favorites…I know you will love them too!!!!  Bon Weekend!!!

The BEST Onion Soup!!!!!

Yesterday I made this onion soup for my family and the ENTIRE pot went so quickly.  Rarely does that happen around here.  I will admit that this is a lengthy process but super easy to make.  You just have to be patient but it really does cook itself.  The results are worth the wait of the cooking time.  Bon Appetit!

Ingredients

3 pounds yellow onions, peeled, sliced, and cut into quarter-moons
2 tablespoons unsalted butter, melted
2 tablespoons olive oil
1 teaspoon salt, plus more to taste
Freshly ground black pepper
10 cups beef broth
3 tablespoons cooking sherry ( I used a little more)

To Serve

4 to 6 baguette slices, toasted, for each bowl
1 1/3 to 2 cups grated Gruyere cheese (1/3 cup per bowl)
Chopped shallot or fresh onion

  1. Season the onions: Place the onion slices in a 5-quart (or larger) slow cooker. Stir in the butter and olive oil, salt, and a generous quantity of black pepper. 
  2. Cook on LOW for 6 hours: Cover and cook on LOW overnight or for 6 hours. The onions should be dark golden brown and soft. 
  3. Add broth: Stir in broth and cooking sherry
  4. Cook 2 hours on LOW: Cover and continue cooking on LOW for 2-4 hours. This is flexible; as long as your slow cooker holds moisture well (wrap a towel over the lid if quite a lot of steam escapes), you can cook the soup for hours. Longer cooking will only intensify the flavors. Taste and season with more salt and pepper if desired, and stir in the brandy if using. 
  5. Portion the soup into oven-safe bowls: Heat the oven to 350°F. Ladle the soup and onions into oven-safe bowls and place the bowls in a baking pan. 
  6. Top with toast and shredded cheese: Top each bowl with a slice of toast and a generous quantity of shredded Gruyere cheese. 
  7. Bake for 20 to 30 minutes: Bake on a rack in the upper third of the oven until the cheese is completely melted. 
  8. Broil for 2 to 3 minutes: Turn the oven to broil and broil the soup for 2 to 3 minutes or until the cheese is bubbling and browned. Remove from the oven and let cool for a few minutes.
