Zucchini Pasta

I have noticed that vegetable pasta is the “in” thing.  Recently, I saw a menu that offered hearts of palm pasta and zucchini pasta.  I have been dying to try the zucchini pasta.   I found this recipe and cannot wait to make it……

Ingredients:
2 Zucchinis
1 tablespoon olive oil
1/4 cup water
Salt and ground pepper to taste
Parmesan cheese

Use a Spiralizer to create noodles from the zucchinis

Heat olive oil in a skillet over medium heat, cook and stir zucchini in the hot oil for 1 minute.

Add water and cook until zucchini is softened, 5 to 7 minutes.  Season with salt, pepper and parmesian cheese.

Book Nook

My youngest daughter has been asking me about creating a book nook in her room.  She would like a comfortable space where she can go after her homework is done to relax and read her school and leisure books.  She has an awkward closet in her room that we easily turned into the enjoyable reading space she was looking for.  This can also be done on in a small corner, or a window seat in any room.  Here are some of the items we found.  We picked out a bunch of comfy pillows and some decorative objects for the shelves in the closet.  Oh, and don’t forget to add a couple of cute lights.

The National

Last week I went to the National, in Greenwich Ct., by Chef Geoffrey Zakarian.  The theme is a neighborhood cafe with seasonal ingredients, hardwood grilling and delicious cocktails.  The food was outstanding and the cocktails even better.  It is definitely a scene to be seen in.  The atmosphere was so glamourous.  The most amazing thing in the restaurant, was the decor.  The lighting and strategically placed oversized palm trees were beyond gorgeous.  I am so inspired that I will be running out this week to buy some for my own living room and dining room.  For more information on The National click HERE

Book Club Monday

My book club just finished Along the Infinite Sea by Beatriz Williams.  Beatriz has quickly become one of my favorite authors.  Her stories are so romantic while still remaining to be engrossing historical novels.  I get so involved with the stories that I simply cannot put them down.  Here is the summary of this book:

Each of the three Schuyler sisters has her own world-class problems, but in the autumn of 1966, Pepper Schuyler’s problems are in a class of their own. When Pepper fixes up a beautiful and rare vintage Mercedes and sells it at auction, she thinks she’s finally found a way to take care of herself and the baby she carries, the result of an affair with a married, legendary politician.

But the car’s new owner turns out to have secrets of her own, and as the glamorous and mysterious Annabelle Dommerich takes pregnant Pepper under her wing, the startling provenance of this car comes to light: a Nazi husband, a Jewish lover, a flight from Europe, and a love so profound it transcends decades. As the many threads of Annabelle’s life from World War II stretch out to entangle Pepper in 1960s America, and the father of her unborn baby tracks her down to a remote town in coastal Georgia, the two women must come together to face down the shadows of their complicated pasts.  Summary Amazon.com

Curb Late Night Cravings

The hardest time of the day for most of us is 8:00 on.  We know we are not suppose to eat late night but still those cravings tend to be there.  If you don’t have them, boy are you lucky!!!  If you do, I have got  a tip for you.  I keep reading that that herbal tea helps curb late night snacking.   There are so many delicious flavors out there, right in your grocery store isle.  I really love mint and jasmine.  Lychee is the next on my list.  So the next time you are craving snacks and sweets at night, make yourself a cup of tea instead!!!!
