This week’s Fashionable Friend Friday is Penny Goffman owner of Jolie Gotique, the awesome mobile boutique in Greenwich Ct. I met Penny last year and have been so impressed with her ever since. I have such a fun recipe for you today. I bet you did not know that Jackie Kennedy was known to make the most delicious waffles!!! This “eggy” version was one of President Kennedy’s favorite foods. I knew that you would love this for your collection. I am going to make them this weekend since all my kids will be home. Woo Hoo!!!!! Bon Appetit!!!!!

1/2 cup butter
1tbsp. sugar
2 egg yolks
7/8 cup milk or 1 cup buttermilk
1 cup plus 1 tbsp sifted flour
1 pinch of salt
2 stiff beaten egg whites
4 tsp baking powder
1. Cream butter and sugar. Add egg yolks. Beat. Add flour and milk alternately. This can be done at any time. When ready to bake, fold in egg whites, add baking powder. Mixture should be thick and fluffy!
2. Cook in a waffle iron and serve with hot maple syrup and butter.
