Patdo Light Studio

I love this wooden chandelier.  I am dying to put it in my bedroom!!!

These were so cool, they are LED square lights that can be hung on the wall…Must have for playrooms!!!


The Best Ever Banana Cream Pie for Mother’s Day

Tomorrow is my mom’s birthday and sadly I will not be celebrating with her.  If I were, I would definitely make this pie for her.  It sounds heavenly and from the reviews..it is insanely delicious!!!  Bon Appetit and Happy B-day Mom!!!!

BANANA CREAM FILLING
  • ¾ cup sugar
  • ¼ cup cornstarch
  • 2 cups half and half
  • 4 egg yolks
  • 3 Tablespoons butter
  • 1½ teaspoons vanilla extract
  • 2 bananas, sliced
WHIPPED CREAM TOPPING
  • 2 cups heavy whipping cream
  • ½ cup sugar
  • ½ teaspoon vanilla


Graham Cracker Crust 

BANANA CREAM FILLING
  1. In medium sauce pan, combine sugar and cornstarch. Add half and half and egg yolks and whisk until well combined. Bring to boil over medium heat, stirring constantly. Boil 1 minute and remove from heat. Stir in butter, and vanilla.
  2. Pour ½ of the filling into the crust.
  3. Top with sliced bananas to cover the filling.
  4. Pour the rest of the filling over the bananas.
  5. Cover with saran wrap directly on the filling itself to avoiding a sticky film on top.
  6. Chill for at least 3 hours.
  7. Top with another layer of sliced bananas.
WHIPPED CREAM TOPPING
  1. In a medium mixing bow,l beat whipping cream at high speed. Gradually add sugar and vanilla. Beat until stiff peaks form. You don’t want them to be soft but you don’t want them to become butter either.
  2. Spread whipping cream over the top of the bananas and then garnish with a few more slices of bananas. Serve.

Power Parfait

Sorry I am one day off again!!!!  ughhhhhh it seems like every week this is happening!!!  I promise to get back on track very soon!!!!   I contacted Sarah Davis of Body Balance 365 for another healthy recipe that will be an easy family favorite during this end of school year rush. This Power Parfait is perfect!!!!  We made it this morning!!!  Bon Appetit!!!

Power Parfait
¾ cup coconut unsweetened yogurt
¼ cup plain oats
1 teaspoon chia seeds
1 scoop of vegan protein powder
1/4 cup almond or coconut milk, or coconut water
¾ cup fresh berries
¼ cup low-sugar, gluten free granola 
Optional toppings: shredded coconut, chopped apple, mint or chopped nuts

Mix yogurt, oats,  chia seeds, protein powder, and liquid. Stir until the liquid is absorbed, and everything is blended. Add berries, granola, and any additional toppings.
