Williston Off Broadway

Who’s up for a last minute trip Off Broadway.  I have been speaking to the producers of Williston and they have reserved a handful of tickets at $28.50 for us on Wednesday, November 7th at 8:00pm.  This is a very limited run for this star studded cast!!  We are lucky to be able to catch it now.  EMAIL me to save your spot.  Here is the story:

Larry and Barb, two veteran oil reps, are closing a deal on drilling rights, in Williston, North Dakota, but the arrival of a newbie changes things up. It’s not business as usual in this boomtown. Miranda presents the world premiere of Adam Seidel’s dynamic, thought-provoking dark comedy.

As part of the POP UP Productions Series, audiences will be treated to a fun complimentary drink or edible delight at each performance. Miranda Theatre Company will bring a little bit of North Dakota to NYC with a variety of treats from “Pride of Dakota” affiliated businesses, including Dakota Kids Sunflower Seeds, Dakota Rose Delights, Dot’s Pretzels, Mikey’s Country Candy and Thunderbird Foods.

Three Step Tomato Soup

I have been searching for over a year for an easy, tasty tomato soup.  Our favorite is the one at Panera and I could not find one that I could make at home, that came close, until today….I even bought a pretzel roll and carved it out to make a bread bowl.  It was a HUGE hit…both my girls and my parents LOVED it…I hope you do too!!! Ingredients:

  • A large diced onion
  • 1 stick of butter
  • Two 28 oz cans of crushed tomatoes (56 oz in total)
  • Two cups of water
  • Salt and pepper to taste

Directions:

  1. Melt butter over medium heat in a pot large enough for the rest of your ingredients.
  2. Dice the onion and place in the pot to briefly simmer.
  3. Empty tomatoes and water into pot.
  4. Allow soup to gently boil for up to half an hour, uncovered.
  5. Blend soup using an immersion blender to your preferred consistency.
  6. Season to taste.

Home Goods Round Up

I told you if we waited a couple of weeks, the really good merchandise would start rolling in.  The Port Chester Home Goods store was packed with an outstanding selection.  I am hoping that this continues and I am going to try to keep up with the weekly or every other week re-caps.  All of the merchandise below was spotted yesterday!!  Happy Shopping!!!!

Weeknight Spinach, Kale and Goat Cheese Pasta

This week I wanted to share a quick easy family dinner that I started making last fall.  It’s a great choice and the spinach and kale combo fills it with just the right amount of superfoods.  It will be very hard for your family to turn this dish down!!!!  Bon Appetit.

  • 1 cloves Garlic, fresh
  • 3 cups Kale, packed leaves
  • 3 cups Spinach, packed leaves
  • 1 Yellow or sweet onion, medium
    • 1/2 lb Pasta, dry
    • 1 pinch Kosher salt and freshly-ground black pepper
    • 2 tbsp Olive oil, extra-virgin
    • 1 tbsp Butter, unsalted
    • 3 oz Goat cheese
    • 3 oz Parmesan cheese

    1. Bring a large pot of water to a boil. Cook the pasta al dente according to package directions.
    2. Meanwhile, heat the olive oil and butter in a large skillet over medium-heat, until the butter is melted and the oil just begins to shimmer. Add the garlic and onion and cook, stirring occasionally, until just softened, about 2-3 minutes.
    3. When the pasta has about two minutes to go, add the kale to the skillet, followed by the spinach, and stir constantly until the greens just begin to wilt. The greens will continue to cook from the heat of the pasta, so be careful not to overcook.
    4. Drain the pasta, then return the pasta to the pot (off of the heat). Pour the greens mixture over the pasta, add the goat cheese and Parmesan, and stir to combine. Serve warm.
