Healthy Peanut Butter Chocolate Chip Cookies

My friend Margarita, made these cookies a few weeks ago and shared them with me, and OMG!!!! I was in shock at how good they were for cookies made with rolled oats and no flour. The entire week after, I could not stop thinking of them. So far we have made them 2 times already. This is probably one of the best recipes I have shared with you, honestly. They remind me of protein bites but even better!!! Bon Appetit!!

Adapted from ambitious kitchen

Ingredients

  • 1 cup natural creamy peanut butter
  • 2/3 cup packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3/4 cup rolled oats (gluten-free if desired)
  • 1/2 teaspoon baking soda
  • 2/3 cup chocolate chips, dairy-free if desired
  • Flakey sea salt for sprinkling on top

Instruction

Preheat oven to 350 degrees F.

Line a baking sheet with parchment paper.

In a small bowl mix together the oats and baking soda; set aside.

In a large bowl mix together peanut butter, brown sugar, eggs and vanilla until smooth. Mix in dry ingredients with a wooden spoon, then gently fold in chocolate chips.

Roll cookies into 2-inch dough balls and place 2 inches apart on the prepared baking sheet. BARELY flatten the top of the cookie with your hand. The dough should be pretty sticky so if you find this method annoying, simply use a cookie scoop to drop the cookie dough onto the prepared baking sheet. The cookies may not be as round in shape and perhaps a bit thicker, but that’s okay, they will still be delicious!

Bake cookies for 9-12 minutes and remove when edges barely begin to turn a golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven. 

Cool for 5 minutes on the cookie sheet then transfer to a wire rack to cool completely. Sprinkle each cookie with flakey sea salt. Repeat with the remaining cookie dough. Makes 16-20 cookies.

Recipe Notes

You can use less sugar or less chocolate chips — I have tried using 1/2 cup of sugar and 1/2 cup chocolate chips and they turned out great.

Feel free to substitute almond butter or another nut butter in replace of peanut butter.

So we missed everything last year, all the glamorous distractions from the doldrums of everyday life that we were so fortunate to look forward to. The things that stick out the most in my mind are Broadway Previews, the Golden Globes, the Oscars, the Met Gala, The Tonys, Concerts, Sporting Events, and even the Olympics! And of course, Fashion Week…as Carrie Bradshaw so perfectly explained, “Every year the women of New York leave the past behind and look forward to the future. This is known as Fashion Week…” I received the most wonderful invitation last week and one that I am really excited about……Brown University Fashion week. The President of the Student Club, Fashion @Brown invited me and all of you (my sweet fashionistas!!!!) to their free virtual Fashion Week event. The lineup is so incredible. So far I am signed up for the SJP, Olivia Palermo, and of course Gweynth. Here is all the info and I hope to see all of you on Zoom!!!!

Brown Fashion Week 2021 will take place from March 4 to March 26 and features some of the biggest names in the fashion and lifestyle industries. Re-imagined by student organization Fashion@Brown (F@B) as a virtual celebration this year, the impressive 22-day program of events is free and open to students and fashionistas around the globe and not limited to the Brown University community.

“Sarah Jessica Parker: Actress, Entrepreneur, Civic Activist: SJP Does it All… and in High Heels”  Thursday, March 4 at 7:30 p.m. – Join F@B in conversation with the powerhouse whose latest bona fides include CEO of the SJP Collection, her booming shoe business; member of the Partnership for New York City, an economic council of NYC’s top CEOs; and vice-chairman of the New York City Ballet… in addition to being a Golden Globe, Emmy, and Screen Actors Guild award-winning actress of the stage, silver screen, and television. Super Bowl Buffalo Chicken Dip

Tonight my husband was given a gift to do an online cooking class with Guy Fieri. During the class, there were other celebrity chef speakers and sport’s commentators talking about their all time favorite Super Bowl dishes. This Buffalo Chicken Dip came up as the winner, unanimously. I started writing down the recipe ferociously. Since I just was given this tonight, I have not had a chance to make it but my son and I are going to try over the weekend. If you do too, will you write in and let me know!!! Bon Appetit!

4 cups shredded cooked chicken

2 bricks cream cheese

1 cup ranch dressing

2 packages shredded cheddar or Mexican blend cheese

3/4 cup hot sauce (less if you do not like too hot and more if you do!!!)

Combine the chicken, cream cheese, dressing, shredded cheese (set aside about 1/4 of the bag), and hot sauce in the crockpot

Let cook on high for 1-2 hours or until all of the cream cheese melts. Right before serving sprinkle the remaining cheese on top and put the lid back on just long enough so the cheese topping melts.

They recommend serving this dip with a bunch of vegetables of your choice and tortilla chips!

How to Make A Detox Bath Salts with Essential Oils

A friend gave me these Detox Bath Salts and I was amazed at how nice and relaxing they were. I was so surprised by how easy they are to make. My girls and I have been making them for a while now. I have tried a few different scents and I think I like Lavender the best but there are so many essential oil scents to choose from.

  • ½ cup Epsom salts
  • ½ cup sea salt
  • ½ cup baking soda
  • 10-15 drops of essential oils scent of your choice. I really like this SET.

Mix the Epsom salts, sea salt, and baking soda together in a bowl. Add your essential oils. I add about 15 drops of essential oil to this recipe (per 1/2 cup of salt).

Scoop it into pretty jars. I purchased THESE. I really like that they come with scoops.

And now it’s time to take a nice long bath. Enjoy!

Book Club Monday

This week’s book club choice is a Reece Witherspoon pick and an instant New York Times bestseller. And I know how much you all love thrillers so The Guest List by Lucy Foley is my pick.

On an island off the coast of Ireland, guests gather to celebrate two people joining their lives together as one. The groom: handsome and charming, a rising television star. The bride: smart and ambitious, a magazine publisher. It’s a wedding for a magazine, or for a celebrity: the designer dress, the remote location, the luxe party favors, the boutique whiskey.
