Happy St Patrick’s Day!! Today is a day to Eat, Drink and be Irish. I recently found this great recipe for Irish Champ. My family LOVED it and it is going to become part of our St Patty’s tradition. Taitneamh a bhaint as!

Ingredients:
2 pounds potatoes peeled and halved
1 cup milk
1 bunch of green onions thinly sliced
1/2 teaspoon salt
1/4 cup butter
1 pinch freshly ground pepper
Bring potatoes to a boil in a large pot. Cook unitl tender approx. 20 minutes.
Heat onions and milk in a saucepan
Mash the potatoes, salt and butter together until smooth. Stir in the milk and green onion until evenly mixed. Season with fresh ground pepper. Serve piping hot in bowls with extra butter to add as you wish.
