One Pot Garlic Parmesan Pasta

I am always searching for easy, quick dinner options for weeknight meals.  Preferably ones that I can make while talking to my children after a long day of school (i.e. not too complicated).  I was browsing on Pinterest and found this One Pot Garlic Parmesan Pasta, which was also nicknamed “Crack Pasta”.  I tried it earlier in the week and it got rave reviews from my three very tough food critics.
I thought I would share the recipe with you since easy, tasty family dishes are always in demand.

One Pot Garlic Parmesan Pasta

Ingredients:
1 tablespoon olive oil
4 cloves garlic, minced

  • 2 cups chicken broth
  • 1 cup milk, or more, as needed
  • 2 tablespoons unsalted butter
  • 8 ounces uncooked fettuccine
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley leaves

Instructions:
  • Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until fragrant, about 1-2 minutes.
  • Stir in chicken broth, milk, butter and fettuccine; season with salt and pepper, to taste.
  • Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 18-20 minutes. Stir in Parmesan and parsley. If the mixture is too thick, add more milk as needed until desired consistency is reached.
  • Serve immediately.

Wishlist Wednesday

On the top of my wish list is an item from Cricket Burns’ “Cricket’s Crush” collection, which she curated herself.  After getting to know Cricket, I am so enamored of her style.  One day she came into a meeting wearing a fabulous electric blue fur vest, and a gorgeous pair of Chanel all weather boots.  She was also wearing her signature statement eyeglasses and she stole the show with one swift movement of walking through the door.  We were all in awe!!

Tomorrow night Cricket is hosting her very own trunk show of all her unique finds.  I cannot wait.  If you are in the area, please stop by, you never know what you might find!

Girlfriend Tip

My dear friend Dana Ramos is the skin guru.  She developed an amazing face peel (with a dermatologist as her technical advisor) that is cost effective and you can do in the privacy of your own home with OUTSTANDING results.  I absolutely love this peel.  I was hesitant at first but the more I got to know Dana, my fears slipped away.  If seeing Dana is not proof enough, she is in her 50’s but does not look a day over 30, once you try this peel you will be hooked!

Ok, but if you still do not believe me…..you must read this…..remember “TAN MOM”?  The mom from Long Island that was accused of taking her child into the tanning booth.  Once seeing her on TV, Dana decided that she needed to help that poor skin damaged lady.  She told “Tan Mom” that she must follow her regiment and she would see a HUGE difference…..well…

If I did not know Dana personally, I would think this was a total hoax….BUT her REGIME WORKS.
Dana has offered to give one of our lucky readers a copy of her book, The Skin Regime and a sample of her fabulous peel.  In order to enter the drawing, please sign up to follow this blog on email and “LIKE” the Skin Regime on Facebook!  The winner will be announced, Thursday, February 26th.
