Omelet Cups

Here is an easy recipe that I know will be a family favorite.  These Omelet Cups are so easy to make and soooo good…especially for these days that we are stuck inside!  I served them for dinner with toasted bagels but they are great for weekend breakfast or brunch!  Enjoy!!!

Omelet Cups right out of the oven, on a vintage Murano glass platter, from Twig Antiques!


Ingredients:

1 package frozen spinach (thawed)
12 eggs
1 small onion chopped
1 package shredded cheddar cheese
1 package pre-cooked bacon cut into small pieces bacon cut into small pieces

Preheat the oven to 350 degrees
Mix ingredients in a large bowl
Using a small ladle fill a well greased cupcake/muffin tin, one by one, almost to the top
Bake for 20 minutes or until a cake tester comes out clean.
cool and serve
yields 17 cups

For the past many months, I have been receiving the same recommendation…..”You HAVE to visit the shop Lola in White Plains New York”.  Last Friday, my friend Kelley, who is a die hard Lola fan, and I ventured over to their location at 396 Mamaroneck Ave in White Plains.  What a pleasant surprise!! Lola is the utmost stop for accessories.  The owners Denise and Dawn have amazing taste.  From the gorgeous costume jewelry to the beautiful clothing and chic handbags, the selection is superb.  Lola is my new favorite shop!!!  Check it out, I guarantee you will love it!!!

More Target Love

After all the Holiday decorations are put away,  I have been hearing that a blahhhhh feeling is setting in with what is left.  No matter how perfect our decorating can be, after all the color and sparkle of the holidays are packed away, our rooms can look a little drab!  Once again, Target hits the mark with well priced yet chic accessories.    Why not add a little accessory here or there to beat the post Holiday decor blues.  Happy Decorating!

Book Club Monday

This fall my son will be heading off to college.  This is so bittersweet.  I am so happy that he is about to experience some of the best years of his life but I am devastated that he is leaving the nest.  I recently listened to a interview with Julie Lythcott-Haims talk about her book  How To Raise An Adult: Break Free of the Over-parenting Trap and Prepare your Kid for Success.  Here is the synopsis of this must read book for parents:

Weekend Real Estate Stalking
