The Best Pumpkin Bars for A Happy Halloween

Happy Halloween!!!  I wanted to share these awesome easy pumpkin bars with you today.  Some say they have even replaced pumpkin pie in their house.  I am not sure if we can go that far over here,  but they are really good.  I hope everyone had a great Halloween.  We had the best time at the Botanical Garden, celebrating my friend Alicia’s Bday, despite the rain.  I have included some fun photos below.  Let me know if you made the bars and how they turned out!!!

Ingredients

Base

  • 15.25 oz Box Yellow Cake Mix Reserve 1 c. for topping
  • 1 egg beaten
  • 1/2 c. butter meted

Middle

  • 15 oz pumpkin puree
  • 2 eggs
  • 2/3 c. milk
  • 1/2 c. brown sugar packed
  • 3 tsp cinnamon
  • 1 tsp vanilla

Topping

  • 1 c. yellow cake mix That you reserved
  • 1/2 c. butter softened
  • 3/4 c. sugar

Instructions

  • Preheat 350 degrees
  • Mix base ingredients well and press into a 9×13 grease cake pan
  • Mix middle ingredients well and pour over base.
  • Mix topping well, until it’s crumbly and sprinkle over middle layer.
  • Bake 50-60 minutes or until it is golden brown and middle is set.
  • Serve with whipped cream on top

Carving Pumpkins

Are you getting ready for Halloween?  This year we did not get to carve pumpkins.  With my older 2 away at college and my youngest swamped with studying for tests, over the weekend, we decided to skip this year.  I did see some really great carving kits at CVS, when I went to get treats to hand out at my husbands office party this week (the kids were the cutest and they did tell us that we had the best selection!!!!  WOOOOO HOOOOO)….I decided to do a virtual carving this year…but maybe I might go back to CVS tomorrow AM and get those carving kits…we still have one day.  I so love Halloween…it is my dear friend Alicia’s B-day..we are taking her to the NY Botanical Garden for lunch and to see their Spooky Pumpkin Garden.  More on that tomorrow!!!! In the meanwhile:

Book Club Monday

    1 stick light string cheese
    1 Flatout Low-Carb flatbread
    2 oz. cooked and finely chopped skinless chicken breast (I use Rotisserie to keep the kitchen cool)2 cups finely chopped romaine lettuce
    2 tbsp. finely chopped red 
    onion
    1 tbsp. light Caesar dressing
    1 tsp. reduced-fat Parmesan-style grated topping
    Directions:
    ~Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
    ~Break string cheese into thirds and place in a blender or food processor — blend at high speed until shredded. (Or pull into shreds and roughly chop.)
    ~Lay Flatout on the baking sheet, and sprinkle with shredded string cheese and chicken. Bake until hot and lightly browned, 8 – 10 minutes.
    ~Let Flatout cool, about 10 minutes. To make the salad, mix romaine and onion in a medium-large bowl. Toss with dressing.
    ~Top pizza with salad and Parm-style topping and some low carb croutons…
