Book Club Monday

Since Harry and Megan’s Royal wedding is this upcoming Saturday, I thought I would feature a book on the soon to be Princess.   Andrew Morton, the royal biographer,  gives us a glimpse into Megan’s world and we get to know who she is, her background and how she will fit in with the Royal Family!!!!!!  Here is the summary:

Tiffany Mimosas For Mother’s Day

I could not resist.  I usually do not post 2 recipes in one week BUT this looked wayyyyy too good to pass up!!!  Happy Mother’s Day Fashionistas!!!!!!!!

1 slice lemon
2 tbsp. sugar
1/4 c. Blue Curacao, divided
1 bottle Champagne or Prosecco
2 c. lemonade, divided


  1. Place sugar on a small shallow plate. Rim each champagne flute with lemon wedge and dip in sugar.
    Divide blue curacao evenly between each glass. Fill halfway with bubbly, then top with lemonade. 

Patdo Light Studio

The Best Ever Banana Cream Pie for Mother’s Day

Tomorrow is my mom’s birthday and sadly I will not be celebrating with her.  If I were, I would definitely make this pie for her.  It sounds heavenly and from the reviews..it is insanely delicious!!!  Bon Appetit and Happy B-day Mom!!!!

BANANA CREAM FILLING
  • ¾ cup sugar
  • ¼ cup cornstarch
  • 2 cups half and half
  • 4 egg yolks
  • 3 Tablespoons butter
  • 1½ teaspoons vanilla extract
  • 2 bananas, sliced
WHIPPED CREAM TOPPING
  • 2 cups heavy whipping cream
  • ½ cup sugar
  • ½ teaspoon vanilla


Graham Cracker Crust 

BANANA CREAM FILLING
  1. In medium sauce pan, combine sugar and cornstarch. Add half and half and egg yolks and whisk until well combined. Bring to boil over medium heat, stirring constantly. Boil 1 minute and remove from heat. Stir in butter, and vanilla.
  2. Pour ½ of the filling into the crust.
  3. Top with sliced bananas to cover the filling.
  4. Pour the rest of the filling over the bananas.
  5. Cover with saran wrap directly on the filling itself to avoiding a sticky film on top.
  6. Chill for at least 3 hours.
  7. Top with another layer of sliced bananas.
WHIPPED CREAM TOPPING
  1. In a medium mixing bow,l beat whipping cream at high speed. Gradually add sugar and vanilla. Beat until stiff peaks form. You don’t want them to be soft but you don’t want them to become butter either.
  2. Spread whipping cream over the top of the bananas and then garnish with a few more slices of bananas. Serve.
