Addicting French Onion Chicken

You are going to LOVE tonight’s recipe.  It is sooo good that I decided to post it one day earlier than my usual Thursday!!!!  My family DIES for this.  It tastes just like onion soup and so incredibly easy to make…and yes, just last weekend a good friend of mine called me the queen of easy recipes…..so if the shoe fits!!!!!!!!!  ENJOY!!!!!  BON APPETIT!!!!

INGREDIENTS
3 tbsp. 

olive oil, divided

large onion, sliced into half moons

2 tsp. 

chopped fresh thyme

kosher salt

Freshly ground black pepper

cloves garlic, minced

chicken breasts, cut into 1″ pieces

1/2 tsp. 

dried oregano

2 tbsp. 

all-purpose flour

1 1/2 c. 

low sodium beef broth

1 c. 

shredded Gruyère

Chopped parsley, for garnish (optional)

DIRECTIONS
  1. In a large skillet over medium heat, heat 2 tbsp olive oil. Add onions and season with salt, pepper, and thyme. Reduce heat to medium-low and cook, stirring occasionally until onions are caramelized and jammy, about 25 minutes. Stir in garlic and cook until fragrant, about 1 minute. Turn off heat and remove onion mixture. Wipe skillet clean.
  2. In a large bowl, season chicken with salt, pepper and oregano, then toss with flour. Heat remaining oil in the same skillet over medium high heat. Add chicken and cook until golden on all sides and mostly cooked through, about 8 minutes.
  3. Add beef broth and return cooked onions to skillet. Bring mixture to a boil, then then educe heat and simmer until chicken is cooked through and beef broth reduces slightly, about 10 more minutes.
  4. Add Gruyère and cover skillet with a lid. Cook until cheese is melty, about 2 minutes. Remove from heat and garnish with parsley. Serve warm.

Williston Off Broadway

Three Step Tomato Soup

I have been searching for over a year for an easy, tasty tomato soup.  Our favorite is the one at Panera and I could not find one that I could make at home, that came close, until today….I even bought a pretzel roll and carved it out to make a bread bowl.  It was a HUGE hit…both my girls and my parents LOVED it…I hope you do too!!! Ingredients:

  • A large diced onion
  • 1 stick of butter
  • Two 28 oz cans of crushed tomatoes (56 oz in total)
  • Two cups of water
  • Salt and pepper to taste

Directions:

  1. Melt butter over medium heat in a pot large enough for the rest of your ingredients.
  2. Dice the onion and place in the pot to briefly simmer.
  3. Empty tomatoes and water into pot.
  4. Allow soup to gently boil for up to half an hour, uncovered.
  5. Blend soup using an immersion blender to your preferred consistency.
  6. Season to taste.

Fall Shopping Ideas

WOW……the days are flying by and it has been so long since I have done a fashion vision board post.  I decided to try again.  My old board posting site closed down and a new company/format took over and its taken me a little time to get it right.  Soooo here goes…These are some of my favorite styles for fall…As always, I am loving leopard, anything fur and embellished shoes.  J Crew has had some amazing pieces…and I added a few splurges in there too…because a girl can dream, no?
