Book Club Monday

I am on a roll with Reece Witherspoon book club picks!!!  This week’s book is Conviction by Denise Mina.  It was am immediate New York Times bestseller…here is the story:

Healthy Baked Eggplant Parmesian

  • 2 Eggplants, medium
  • 1/3 cups basil
  • 2 Eggs, large
  • 1 24 oz jar Marinara sauce
  • 1 cup Almond flour
  • 1 Black pepper, Freshly ground
  • 2 tsp Italian seasoning
  • 1/2 tsp Sea salt
  • 1 Cooking spray
  • 2 cups Mozzarella
  • 1 cup Parmesan

INSTRUCTIONS

  1. Preheat oven to 425°F. Line two large baking sheets with parchment paper and coat with cooking spray. In a shallow bowl, whisk together almond flour, 1/2 cup Parmesan, Italian seasoning and ½ teaspoon sea salt. Season with salt and pepper. 
  2. In another shallow bowl, whisk eggs with 2 Tablespoons water and season with salt and pepper. 
  3. Dip an eggplant slice into the egg wash, then sprinkle the almond flour parmesan mixture over each side of the eggplant slice. Place on baking sheet. Repeat to coat all eggplant slices. Spray tops lightly with cooking spray.
  4. Bake until soft inside, and golden and crisp on the outside, about 30 minutes, flipping around the 15 minute mark.
  5. In a large baking dish, add 1 cup of marinara and spread evenly. Add an even layer of baked eggplant slices. Add another 1 cup of sauce. Sprinkle with 1 cup mozzarella, ¼ cup of the remaining Parmesan and 1/4 cup fresh basil. Top with another layer of baked eggplant slices and spread on 1 cup of sauce. Top with 1 cup of mozzarella cheese, ¼ cup parmesan and remaining fresh basil.
  6. Bake, uncovered, until top is bubbly and golden, about 15 to 20 minutes.

Who What Wear At Target

Right before Christmas I partnered with Target to try their Who What Wear line.  I had never seen anything from them before so I did not know what to expect!!!  OMG!!! I was pleasantly surprised.  I spent the past 10 days with my parents in Florida and I decided to give my new Target wardrobe a try.  I was so pleasantly surprised with all the pieces.  They looked much more expensive and everything was so stylish!!  My mom, who is a tough critic, was shocked at how cute all the looks were.  With her stamp of approval, I decided to share some really fun, inexpensive fashion finds with you for the new year!!!!

This dress is so adorable…I love the bow tie neck..Its hard to choose which color to pick!!!

This maxi dress is amazing..I love the light orange color…it runs large so go down a size or 2!!!!

If red is your color, you have to get this dress…the style is soo flattering!!

I bought this blouse in the black and wore it with white jeans!!!!!!

This blouse looks amazing with leather pants!!!!

I did not buy these yet but I am going to get the cream for the spring/summer..I love the front slit!!

Both of these blouses reminded me of Liberty of London and they both look great with jeans!!!!! I wore them with my dark flares!!!!

I love both of these sleeveless blouses!!!

These pants were by far my favorite piece in the entire collection..I wore mine with a black blouse but they would look great even with the sleeve top mentioned above.

Book Club Monday

HI..I am starting off the new year with a Reece Witherspoon book club choice, Such a Fun Age by Kiley Reid.  I saw this book on instagram and was sooo hooked by the description and so far I have always LOVED Reece’s picks!!  I cannot wait to start it…Here is the story:
