Wrap Battle

I am the WORST wrapper!!  I cannot wrap a gift to look presentable at all.  So when my uber talented friend Eddie Ross posted that he was going to be on a show called Wrap Battle, a gift wrapping competition, I was fascinated.  OMG!! I LOVE it.  The contestants, Eddie being one, are given different items to wrap each week in order to win the grand prize.  And the items and assignments are really OUT OF THE BOX!!!!!  Of course I think Eddie’s are truly the best, or at least have been for the episodes that I have seen.  You have to check out this show.  It is so much fun for this time of year…To learn more about the show click HERE.  PS Carson Kressley (from Queer Eye) is one of the hosts!!!

Vanilla Meringue Cookies

Tis the season for Cookie exchanges…my daughter has one next week…She thought she might like to bring Meringues.  OH NO!!!  Baking is really not my strong suit.  I googled an easy recipe and ordered a pastry bag with the best reviews on Amazon and we are all set to go this weekend!!!!  Here is the recipe if you are in the same baking boat.  It is suppose to be very easy and very good……

Vanilla Meringue Cookies
(adapted from the Food Network)

Ingredients

3 large egg whites, at room temperature
1/2 teaspoon vanilla extract 
1/8 teaspoon cream of tartar 
3/4 cup granulated sugar 
  1. Preheat the oven to 200 degrees F; line 2 baking sheets with parchment paper.
  2. In a stand mixer fitted with a whisk attachment, add the egg whites, vanilla and cream of tartar. Beat until the mixture is frothy and soft peaks form. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat for an additional 5 minutes. The egg whites should be glossy and stiff but not dry.
  3. Spoon the mixture into a large pastry bag fitted with a large star tip. Pipe 2-inch cookies onto the lined baking sheets, leaving 1 inch between each cookie.
  4. Bake for 45 minutes, then turn off the oven and leave the cookies in the oven for an additional 30 minutes. Remove and cool completely before storing in an airtight container.

Delicious One Pot Leftover Turkey Soup

We are a little out of sync this week but I wanted to get this recipe to you sooner than later….I am hoping you still have some of your turkey left overs.  I have a huge container sitting in my fridge and I am going to make this soup tomorrow…It is such a good and easy recipe and a great way to use up all of your leftovers.   I like to cook the pasta and add it afterwards.  Not everyone in my house likes pasta in their soup…go figure!!!!  Bon Appetit!!!

INGREDIENTS

  • 2 cups carrots , sliced

  • 1/2 cup onion , chopped
  • 1 cup celery , chopped
  • 1 Tablespoon butter
  • 1 cup water
  • 43.5 ounces chicken broth , or turkey stock (3 cans)
  • 1 cup elbow noodles , uncooked
  • 2 1/2 cups turkey , cooked and shredded
  • 1 teaspoon fresh thyme (1/4 teaspoon dried)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

INSTRUCTIONS

  • Combine the carrots, onion, celery and butter in a large pot over medium-heat. Cook for 2-3 minutes, or until onions are soft. 
  • Add the water and chicken broth to the pot. Bring to a boil and cook for about 10-15 minutes. 
  • Add the noodles, turkey, thyme, salt, pepper and garlic powder and bring to a boil. Cook for an additional 10-12 minutes or until the noodles are cooked. Add more salt and pepper to taste
